I can't seem to work out how to display how I've completed the required task and have my nickname displayed at the same time. Do I take a screenshot with the expansions building Tab open? Or is there some other way to do it?

You can finish quest 1 by Researching Teaching

After you unlock researching through the in-game quests, you will be asked to research Construction, and The Wheel. After this, research Cultivation, Chalets, or Sling Shots, and then Growing, Horseback Riding, or Thatched Houses, then you will unlock Teaching.
